Ingredients

  • 2 medium eggplants peeled and diced
  • 1/4 medium cauliflower, finely chopped
  • Stir-fry oil
  • 1 tablespoon butter
  • 1/2 chopped onion
  • 1 clove garlic
  • 1 teaspoon of fine salt
  • Merkén or pepper to taste
  • 1 tsp thyme
  • 1/4 tsp ginger
  • 600 ml boiled water
  • frosting
  • Cilantro or parsley for garnish

Instructions:

    Step 1
  • We started making a stir-fry with the oil, butter, chopped onion and garlic. (approx. 3 minutes)
  • Step 2
  • Then add the chopped eggplants, salt, sauté for a few minutes, then add the chopped cauliflower, boiled water, thyme, merkén, ginger, cook 15 to 20 minutes depending on the thickness of the vegetables and on medium low heat. (Take the cooking time when it starts to boil)
  • Step 3
  • Blend all the cooked ingredients until you get a smooth cream.
  • Step 4
  • Add cream to taste and blend again so that it blends.
  • Step 5
  • Serve warm and garnish with cilantro or parsley.
