Instructions:

Step 1
• Peel and cut the sweet potato small, reserving some thin slices.
Step 2
• Chop the onion and leek. Poach in a saucepan with a little extra virgin olive oil over low heat.
Step 3
• When they are poached, add the sweet potato in pieces, raise the heat to medium, season and sauté for a few minutes.
Step 4
• Cover with water, let it cook until the sweet potato is soft, then add the peas and let them cook.
Step 5
• Whisk well and add salt if necessary.
Step 6
• Fry the reserved sweet potato slices in a pan with a little extra virgin olive oil and over high heat.
Step 7
• Plate the cream, add some sweet potato chips and serve hot freshly made.
