Ingredients

  • 5 apples.
  • 1 tbsp of sugar.
  • Butter.
  • 1 tbsp of cinnamon.
  • 90 gr. of powdered sugar.
  • 120 gr. of gingerbread cookies.
  • 100 gr. of powdered sugar.
  • 25 gr. of almonds.
  • 25 gr. of cookie crumbs.
  • 300 ml. of cream.

Instructions:

    Step 1
  • Preheat the oven to 180ºC.
  • Step 2
  • Peel the apples and remove the stem, but not the entire core.
  • Step 3
  • Very carefully, using a mandolin, cut all the apples into thin slices and place in a bowl of cold water.
  • Step 4
  • Grease a 20 cm cake pan with butter and cover with sugar.
  • Step 5
  • Place the apples on the bottom and cover with the mixture of processed gingerbread cookies and sugar.
  • Step 6
  • Continue this process until you have completed the desired number of layers.

  • On the final layer, sprinkle a little cinnamon and a little butter.

  • Press the apples down lightly and then place in the oven for 30-40 minutes until the apples are soft and caramelized.

  • While this is cooking, make the caramel: heat the sugar in a non-stick saucepan on medium heat.

  • Don't move the sugar, no matter how tempting it may be.

  • Only when it starts to bubble and all the sugar turns golden brown can the pan be carefully stirred to incorporate all the sugar.

  • Pour quickly onto grease-resistant paper or silicone mat and sprinkle with walnuts and cookie crumbs in reserve.

  • Allow to cool and harden completely.

  • Mix the cream with sugar until a desired consistency is achieved, add the hardened caramel cut into pieces.
