2 cups rice flour
1 cup sugar
1 tsp baking powder
3 eggs
1 1/2 cups coconut milk
1/2 cup fresh milk
1/4 cup melted butter
Salted duck eggs (sliced)

Instructions:
Step 1
Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
Step 2
In a large mixing bowl, combine the rice flour, sugar, and baking powder.
Step 3
In a separate bowl, beat the eggs and add the coconut milk, fresh milk, and melted butter. Mix well.
Step 4
Pour the wet mixture into the dry ingredients and stir until you have a smooth batter.
Step 5
Pour the batter into the greased baking pan.
Step 6
Arrange the sliced salted duck eggs on top of the batter.
Step 7
Bake in the preheated oven for about 30-35 minutes or until a toothpick comes out clean when inserted into the center.
Step 8
Remove from the oven and let it cool for a few minutes.
Step 9
Slice the Bibingka into squares, garnish with grated coconut, and serve warm. Enjoy!
