  • 3 eggs
  • 1 1/2 cups coconut milk
  • 1/2 cup fresh milk
  • 1/4 cup melted butter
  • Salted duck eggs (sliced)
  • Grated coconut (for topping)

Instructions:

    Step 1
  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • Step 2
  • In a large mixing bowl, combine the rice flour, sugar, and baking powder.
  • Step 3
  • In a separate bowl, beat the eggs and add the coconut milk, fresh milk, and melted butter. Mix well.
  • Step 4
  • Pour the wet mixture into the dry ingredients and stir until you have a smooth batter.
  • Step 5
  • Pour the batter into the greased baking pan.

  • Arrange the sliced salted duck eggs on top of the batter.

  • Bake in the preheated oven for about 30-35 minutes or until a toothpick comes out clean when inserted into the center.
