Today I will show you how to prepare healthy Arroz Pudding, a traditional Spanish dessert but wholemeal to lower cholesterol.

It's healthier and you do it with coconut milk.

Ingredients

  • 1 l milk, soy or oat drink
  • A cinnamon stick
  • 1 small piece of lemon and orange peel
  • 10 drops lemon scent (optional)
  • 100 g regular or brown rice
  • 80 g boneless dates
  • 400 ml milk. If more is needed
  • Cinnamon powder for garnish
  • 15 g butter (optional)

Instructions:

    Step 1
  • Put 400 ml of your chosen milk in a saucepan, with the cinnamon stick, the dates, the lemon and orange peels or, where appropriate, the lemon scent. Let it cook over low heat for 15 minutes. Remove to a container and set aside
  • Step 2
  • In the same saucepan you put 600 ml of the chosen milk. When it starts to boil, add the normal or brown rice. When it boils again, lower it to the minimum and let it cook for 20 minutes, stirring from time to time.
  • Step 3
  • While we take everything out of the reserved milk, except the dates, we grind very well with the mini pimer.
  • Step 4
  • Add to the rice and let it cook for another 20 minutes, all together and well connected over low heat, add more milk if necessary, and try when the rice is ready, that depends on whether it is normal or whole wheat.
  • Step 5
  • Add the butter and mix everything very well.
  • Step 6
  • Divide into bowls, glasses, bowls or tapers, put in the fridge and drink very cold, with ground cinnamon on top.
  • Step 7
  • Comments: Cinnamon is very good to be taken in many things, such as coffee, chocolate, fruits, desserts and even foods. It improves insulin sensitivity, better distributing carbohydrates from food and not accumulating as fat. I've also been told that it's anti-inflammatory.
