Ingredients

  • 1 and 1/2 cups of all-purpose flour
  • 1 cup of sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups of shredded carrots
  • 1/2 cup of chopped walnuts (optional)
  • For the cream cheese:
  • 1/4 cup of unsalted butter, at room temperature
  • 4 oz cream cheese, at room temperature
  • 2 cups of powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

    Step 1
  • Preheat the oven to 175°C and grease a cake pan.
  • Step 2
  • In a large bowl, mix together the flour, sugar, baking soda, baking powder, salt and cinnamon.

  • Add the vegetable oil, eggs and vanilla extract to the dry ingredient mix and mix until well combined.

  • Add the grated carrot and walnuts (if used) to the mixture and mix well.
  • Step 5
  • Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  • Step 6
  • In the meantime, prepare the cream cheese. In a large bowl, whisk together the butter and cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract and beat until the mixture is smooth.
