  • 1 egg white
  • 125 g sugar
  • 1 tablespoon lemon juice
  • A pinch of salt
  • Jam of the flavor that we like the most, I used strawberry, blueberry and peach

Instructions:

    Step 1
  • Place the butter, sugar, egg white, lemon juice, salt and flour in a bowl.
  • Step 2
  • Knead well with our hands until we get a slightly soft dough, which we will put in the fridge for an hour.
  • Step 3
  • Once ready, with the help of a roller, we roll it out on a floured surface, leaving it approximately 4 mm thick. If we see that it sticks to us, we will sprinkle flour
  • Step 4
  • With the help of a pasta cutter, or a glass, we cut discs of the size we want to make the cookies.
  • Step 5
  • Half of the discs are made with little holes. We can make them with a thimble, or some other object that works for us.
  • Step 6
  • The other half of the discs were left unperforated.
  • Step 7
  • Once the cookies are ready, we put them in the preheated oven at 210º, about 10 or 12 minutes. It depends on the oven... but don't let them brown too much. Just when they start to take color, we remove them.
  • Step 8
  • When we have them all baked, we let them cool and fill them. To do this, we cover the cookie that does not have holes with jam, and place the ones that do have them on top.

  • Sprinkle with icing sugar and ready to eat
