Recipe of Nougat and chocolate arm

Vida Recetas Editorial

The nougat and chocolate arm is a light, sugar-free version of the classic Swiss roll, ideal for those looking for a festive dessert without guilt. This turron recipe combines a fluffy cocoa and spelt flour sponge with a creamy filling of cream cheese and sugar-free soft nougat, achieving a perfect balance between the intense flavor of chocolate and the smoothness of nougat. Its origin is inspired by Spanish Christmas tradition, but it adapts to a healthy lifestyle thanks to the use of erythritol as a natural sweetener and coconut oil instead of butter.

This preparation is surprisingly easy, with a low difficulty level, and the result is an elegant dessert that will impress your guests. Additionally, it is a versatile option: you can substitute soft nougat with crushed hard nougat for a crunchy touch, or add chopped nuts to the filling. The sponge, baked in just 12 minutes, is rolled with the help of a cloth to achieve that characteristic shape, and the filling is spread gently before rolling again. Perfect for celebrations, special snacks, or as a sweet indulgence any time of the year.

Ingredients

Directions

  1. 1

    Preheat the oven to 175ºC

  2. 2

Separate the egg whites from the yolks and beat the egg whites until stiff. Mix the yolks, coconut oil, milk, vanilla and erythritol in a bowl. Mix the flour, cocoa and baking powder in another bowl, sift it with a sieve so that there are no lumps and beat with the previous mixture

  3. 3

Add the egg whites and stir with enveloping movements trying not to lower the whites. Spread the dough in a baking tray on parchment paper and bake for 12 minutes

  4. 4

On a clean cloth, sprinkle a little cocoa; carefully put the cake on top and roll it up, leaving the cloth rolled up with the cake. Let it cool

  5. 5

Whisk the cheese spread well with the nougat, roll out the cake, spread the filling and sprinkle a little crumbled nougat

  6. 6

Roll the cake again, without the cloth; wrap it in transparent film and freeze for at least 2 hours. Cut off the ends, decorate with almond cream and enjoy!
