    Mix the 3 eggs, the 100 g of sugar in a bowl and whisk manually until the sugar has completely dissolved. Add the remaining 150 g of milk and whisk again. Add the 100 g of 35% M.G. cream and whisk again.

    Strain the infused milk and mix it with the previous mixture of eggs, sugar, milk and cream.

    Increase the heat and stir, with the first boiling of the mixture, add the 150 g of flour and stir hard for a few seconds. When the flour starts to thicken, remove the pot from the heat and continue to stir.

    After about 2-3 minutes of stirring, we stretch the dough on a tray and let it rest for half an hour, just so that it cools down and we can handle it well with our hands.
