Instructions:

  • We infuse 500 g of milk. When it starts to boil, add the orange peel and cinnamon powder or a cinnamon stick.

  • Heat for 1 minute and remove from the heat, cover and let it rest for about 25 minutes.

  • Mix the 3 eggs, the 100 g of sugar in a bowl and whisk manually until the sugar has completely dissolved. Add the remaining 150 g of milk and whisk again. Add the 100 g of 35% M.G. cream and whisk again.

  • Strain the infused milk and mix it with the previous mixture of eggs, sugar, milk and cream.

  • Increase the heat and stir, with the first boiling of the mixture, add the 150 g of flour and stir hard for a few seconds. When the flour starts to thicken, remove the pot from the heat and continue to stir.

  • After about 2-3 minutes of stirring, we stretch the dough on a tray and let it rest for half an hour, just so that it cools down and we can handle it well with our hands.
  • Step 7
  • Beat a couple of eggs and prepare some flour for batching. With the help of a spoon we begin to shape fried milk, you can make rectangles, squares, balls, whatever you like best. And with the given shape, we pass them through flour and egg.

  • Fry the portions in plenty of oil and leave it on a plate with absorbent paper so that they cool down a little.
  • Step 9
  • With the portions still warm, prepare a mixture of sugar and cinnamon on a large plate or platter. To taste, the quantities that you create best and you recoat them in this mix.
