Recipe of Eggplants with turkey and vegetables

Vida Recetas Editorial

The eggplant is a versatile vegetable that, when properly treated, becomes the base of delicious and healthy dishes. This recipe for eggplants stuffed with turkey and vegetables is perfect for those seeking a complete, nutritious, and low-fat meal. Originating from Mediterranean cuisine, this preparation combines the softness of roasted eggplant with a stir-fry of onion, leek, garlic, and carrot, enriched with ground turkey breast and a touch of curry that gives it an exotic aroma.

The trick to eliminating the characteristic bitterness of eggplant is to salt it and let it rest before baking, a simple step that makes a difference. The result is a comforting dish, ideal for a light dinner or a balanced lunch. Moreover, it is an excellent option to introduce vegetables into children's diets, as the mild flavor of turkey and spices makes it very appealing.

You can serve these eggplants as a main course accompanied by rice, or as a side dish. They also admit variations: replace turkey with chicken or add other vegetables like zucchini or bell pepper. Go ahead and prepare them and discover how eggplant can become your favorite ingredient!
