Recipe of Eggs stuffed with tuna
Vida Recetas Editorial
Eggs stuffed with tuna are a classic of Mediterranean cuisine that never fails: easy to prepare, budget-friendly, and perfect for any occasion, from a light dinner to a festive appetizer. This recipe elevates the traditional stuffed egg with a homemade touch: a homemade mayonnaise and a sautéed onion that adds sweetness and texture. The result is a creamy, flavorful, and very versatile bite, ideal to serve as a starter, at a buffet, or even as a sandwich filling.
Why will you love this version?
Unlike commercial versions, here you control the ingredients and flavor. The combination of tuna in its natural juice, homemade fried tomato, and grated egg yolks creates a fine but substantial texture, while the homemade mayonnaise, with a hint of lemon and vinegar, adds freshness and lightness. Plus, it's a very adaptable recipe: you can add olives, capers, or paprika to customize it.
If you're looking for a quick option with a restaurant presentation, these stuffed eggs are your choice. Follow the steps and surprise your guests with a dish that tastes like tradition and home.

Directions
-
1
Cook the eggs in a saucepan with water and salt. When they are ready we will let them cool down.
-
2
Chop the onion very small with the mincer of the blender, simply by giving a few gentle touches, without going over it so that it does not puree. We will fry it a little in a pan with a drizzle of olive oil and a pinch of salt.
-
3
Cut the hard-boiled eggs in half and separate the yolks from the whites that we will leave reserved.
-
4
We will grate the egg yolks so that they are in very small pieces. The ideal is to use the chopper accessory of our hand blender... we'll just give it a few small touches and the yolks will stay at a perfect size.
-
5
In a bowl, we will mix the tuna and the fried tomato together with the already grated egg yolks, but we will leave a small amount of yolks for the final decoration.
-
6
We will now make a homemade mayonnaise using our hand blender. We will put the egg and sunflower oil in your measuring cup. We put the foot of the mixer and without lifting it from the bottom, we press at maximum speed, we will see in a short time it begins to emulsify... there we can raise the mixer a little by little... we will gradually add the olive oil and we will continue whisking so that it integrates.
-
7
Once we see that the mayonnaise is firmer, add the juice of a lemon, the vinegar and the pinch of salt. We beat again to integrate everything.
-
8
We fill the halves of the eggs with this filling that we have made. We'll place them in a fountain.
-
9
We will put mayonnaise on the eggs and just before serving them, we put grated egg yolk on top. Let's enjoy!
