Instructions:
Step 1
Cook the eggs in a saucepan with water and salt. When they are ready we will let them cool down.
Step 2
Chop the onion very small with the mincer of the blender, simply by giving a few gentle touches, without going over it so that it does not puree. We will fry it a little in a pan with a drizzle of olive oil and a pinch of salt.
Step 3
Cut the hard-boiled eggs in half and separate the yolks from the whites that we will leave reserved.
Step 4
We will grate the egg yolks so that they are in very small pieces. The ideal is to use the chopper accessory of our hand blender... we'll just give it a few small touches and the yolks will stay at a perfect size.
Step 5
In a bowl, we will mix the tuna and the fried tomato together with the already grated egg yolks, but we will leave a small amount of yolks for the final decoration.
Step 6
We will now make a homemade mayonnaise using our hand blender. We will put the egg and sunflower oil in your measuring cup. We put the foot of the mixer and without lifting it from the bottom, we press at maximum speed, we will see in a short time it begins to emulsify... there we can raise the mixer a little by little... we will gradually add the olive oil and we will continue whisking so that it integrates.
Step 7
Once we see that the mayonnaise is firmer, add the juice of a lemon, the vinegar and the pinch of salt. We beat again to integrate everything.
Step 8
We fill the halves of the eggs with this filling that we have made. We'll place them in a fountain.
Step 9
We will put mayonnaise on the eggs and just before serving them, we put grated egg yolk on top. Let's enjoy!
