Instructions:

    Step 1
  • Put a spoonful of extra virgin olive oil in a pan, sauté the peas in it. We booked.
  • Step 2
  • Chop the onion and put it in a pan with extra virgin olive oil and a little salt, fry it for 8 minutes. After the time has elapsed, add the two sliced garlic, mix well and leave for 10 to 15 minutes until the onion caramelizes (on medium-low heat).
  • Step 3
  • Once the onion is ready, add the chorizo cut into pieces and do a few laps. Add the sweet paprika and mix well for one minute, then add the vinegar and let it cook for another minute.
  • Step 4
  • Chop the tomato and add it to the pan, let it cook for 15 minutes.
  • Step 5
  • After 15 minutes, add the ham and peas. Let it cook on a very low heat while we fry the potatoes and eggs.
  • Step 6
  • Peel and cut the potatoes into small pieces, put them in a saucepan and add sunflower oil to fry (you can also do it with olive oil). Once fried, we take them out of the pot and let the potatoes rest on absorbent kitchen paper to remove excess fat.
  • Step 7
  • Finally, we fry three eggs (one per person) in extra virgin olive oil and add a little salt, set aside.
  • Step 8
  • We tied, divided the potatoes between the three plates, tomato sauce with sausage, peas, ham and finally we added the fried egg.
