Recipe of Flamenco eggs

Vida Recetas Editorial

The egg is the star of this traditional Andalusian recipe: Flamenco eggs. A hearty and flavorful dish that combines homemade tomato sauce with peas, Serrano ham, and chorizo, topped with eggs baked in the oven. Originally from Seville, this dish is perfect for a special lunch or dinner, as it is easy to prepare and allows variations such as adding asparagus or bell pepper. The key is to achieve a thick and tasty sauce that contrasts with the runny yolk. Ideal for those seeking a comforting and nutritious option, packed with protein and vitamins.

How to serve Flamenco eggs

They are traditionally served in an individual clay casserole, with two eggs per person if a more generous portion is desired. Serve with crusty bread for dipping into the sauce. This recipe yields 3 servings.

Put a spoonful of extra virgin olive oil in a pan, sauté the peas in it. We booked.

  2. 2

Chop the onion and put it in a pan with extra virgin olive oil and a little salt, fry it for 8 minutes. After the time has elapsed, add the two sliced garlic, mix well and leave for 10 to 15 minutes until the onion caramelizes (on medium-low heat).

  3. 3

Once the onion is ready, add the chorizo cut into pieces and do a few laps. Add the sweet paprika and mix well for one minute, then add the vinegar and let it cook for another minute.

  4. 4

Chop the tomato and add it to the pan, let it cook for 15 minutes.

  5. 5

After 15 minutes, add the ham and peas. Let it cook on a very low heat while we fry the potatoes and eggs.

  6. 6

Peel and cut the potatoes into small pieces, put them in a saucepan and add sunflower oil to fry (you can also do it with olive oil). Once fried, we take them out of the pot and let the potatoes rest on absorbent kitchen paper to remove excess fat.

  7. 7

Finally, we fry three eggs (one per person) in extra virgin olive oil and add a little salt, set aside.

  8. 8
