  • 2 very fresh eggs.
  • 2 slices of braised turkey.
  • cherry tomatoes.
  • salt.
  • pepper.
  • fresh parsley.
  • extra virgin olive oil.

Instructions:

    Step 1
  • Chop the parsley and tomatoes and set aside.
  • Step 2
  • Beat the eggs and mix them with the ham cut into strips.
  • Step 3
  • Grease a non-stick pan with half a tablespoon of oil and put it on medium-low heat. If you wait for it to heat up, add the beaten eggs.
  • Step 4
  • When after a few seconds we see that they start to set slightly around the edges, we start moving them with the spatula as you can see in the video and lower the heat to a minimum. What we will do will be movements with the spatula as if we were folding the eggs with care, since we are not interested in having very small pieces of curdled eggs left that would be dry.
  • Step 5
  • While we are moving them with the spatula, from time to time we lift the pan from the heat and, when they are almost ready, we turn it off. We keep moving them for a few more seconds until they are set to our liking and we transfer them to a plate.
  • Step 6
  • We put salt, pepper and chopped parsley on top and serve with the cherry tomatoes that we had reserved. It is very important not to add salt until the end, because salt is an ingredient that absorbs moisture and if we put it when we beat the eggs, in the end they will be much less juicy.
