    We will start by toasting the flours, throw the two flours into a large pan and heat them to medium temperature, turning them from time to time until they take on a slight yellow color and smell like popcorn.

    Pour the flours into a large bowl or on the oven tray, spread well and let them cool.

    Preheat the oven to 180º C.

    In a large bowl, put the flours and mix with the icing sugar, cinnamon and oil.

    Once everything is well kneaded, better with the hand, we extend it with a rolling pin and leave it a thickness of about two centimeters and cut with a pasta cutter or a glass. We can also make a roll with the dough and cut them into pieces. If necessary because the dough is a little soft, we can put it in the fridge for an hour wrapped in plastic wrap.

    Place them on the baking tray, on top of parchment paper and bake for about 10-12 minutes.

    We let them cool down and we don't touch them for a while because they'll break.

    Sprinkle with icing sugar and keep them in a metal box for better preservation.
