Recipe of Zucchini crepes

Wash the zucchini and grate it. If you have Thermomix it is the best option because it grinds very well.

Put the grated zucchini in a clean, dry cloth and squeeze it tightly so that all the water drains out. This is very important, it is necessary that there is almost no water left.

In a bowl or Thermomix, add the zucchini, eggs, flour, salt and pepper. Stir until a homogeneous mixture is created.

In a medium pan or crepe maker, put a little oil and spread it with paper. When it is hot (medium heat), add half of the mixture and spread it completely so that a thin dough remains.

Let it do without touching for a few minutes. To check, we put in a shovel and see if it peels off properly. If so and it's a little golden brown, it's time to add the cheese and cooked ham (3 of cheese and 4 of ham cooked for crepe)

Fold one half and let it do for a couple of minutes. Then fold it again and leave it for 1 minute. We turn it around and rest another minute so that everything can be done completely.
