  • 1 (500-600g) large zucchini
  • 2 eggs or 1 egg and 3 egg whites
  • 6 slices of Havarti cheese
  • 8 slices of cooked ham
  • Salt to taste
  • To taste black pepper
  • 2 tablespoons oatmeal

Instructions:

    Step 1
  • Wash the zucchini and grate it. If you have Thermomix it is the best option because it grinds very well.
  • Step 2
  • Put the grated zucchini in a clean, dry cloth and squeeze it tightly so that all the water drains out. This is very important, it is necessary that there is almost no water left.
  • Step 3
  • In a bowl or Thermomix, add the zucchini, eggs, flour, salt and pepper. Stir until a homogeneous mixture is created.
  • Step 4
  • In a medium pan or crepe maker, put a little oil and spread it with paper. When it is hot (medium heat), add half of the mixture and spread it completely so that a thin dough remains.
  • Step 5
  • Let it do without touching for a few minutes. To check, we put in a shovel and see if it peels off properly. If so and it's a little golden brown, it's time to add the cheese and cooked ham (3 of cheese and 4 of ham cooked for crepe)
  • Step 6
  • Fold one half and let it do for a couple of minutes. Then fold it again and leave it for 1 minute. We turn it around and rest another minute so that everything can be done completely.
  • Step 7
  • We serve, we can serve with rice for example. We make the other half of the dough exactly the same. And let's eat!
