Ingredients

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons besan (gram flour)
  • 1/4 teaspoon baking soda
  • 1/4 cup plain yogurt
  • 1 teaspoon ghee (clarified butter)
  • A few strands of saffron
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon rose water
  • Oil for deep frying

Instructions:

    Step 1
  • In a mixing bowl, combine all-purpose flour, besan, and baking soda.
  • Step 2
  • Add yogurt and mix to form a smooth batter. Let it ferment for 6-8 hours or overnight for better flavor.

  • In a small saucepan, heat the saffron strands in ghee and add them to the batter.
  • Step 4
  • In a separate saucepan, make a sugar syrup by boiling sugar, water, cardamom powder, and rose water until it reaches a one-thread consistency.

  • Heat oil in a deep pan. Pour the batter into a squeezable plastic bottle or a cloth cone with a tiny hole at the tip.

  • Squeeze the batter into the hot oil in a spiral or pretzel shape and fry until it turns golden and crisp.
  • Step 7
  • Remove the jalebis from the oil and immediately dip them into the warm sugar syrup.
  • Step 8
  • Let them soak for a minute, then take them out, and serve your delicious homemade jalebis. Enjoy!
