    We started from the chickpeas to the Aldi canned truffle that they gave me 😜. We drain them and set them aside.

    Cook the ribs for 40 minutes in water with a bay leaf. We are foaming to remove possible impurities. In the end, we reserve the ribs on one side and on the other the resulting well-strained broth.

    While the ribs are cooking, we make the stir-fry.

    To do this, clean and cut the rovellons into bite pieces and sauté them briefly in a saucepan. We booked.

    In that same pot, simmer the onion, garlic and pepper as small as you can over low heat

    Add the ñora, the paprika, the tomato, the white wine and the reserved cooked ribs. Remove and let it dry.

    Add the mushrooms and some of the reserved cooking water and let it cook for about 10 minutes until a sauce forms. We salt and pepper. Add broth if necessary.
