  • 2 tablespoons vegetable oil
  • 3-4 dried red chilies, whole (adjust to your preferred spice level)
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 green onions, sliced (white and green parts separated)
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon Sichuan peppercorns (optional, for a numbing sensation)
  • Salt and pepper to taste

Instructions:

  • In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sugar, and a pinch of salt. Set aside.

  • In a wok or large skillet, heat the vegetable oil over medium-high heat.

  • Add the dried red chilies and Sichuan peppercorns (if using) to the hot oil. Stir-fry for about 30 seconds until they become fragrant.
