Clean the mackerels inside and outside under the tap.

We transfer them to the carving board and cut them into 3 pieces. We salt and flour them.

Put plenty of oil in a paella and fry the fish.

Mix well and add the pieces of mackerel. Put it on the fire and when it starts to bubble we lower the temperature and keep it for 2 or 3 minutes.

Then we move to a clay container with high walls so that the fish is covered.

When it has cooled, cover with parchment paper and store in the fridge for 24 to 48 hours.
