Ingredients

  • 2 ½ cups lentils (soaked overnight)
  • 1 Tbsp olive oil
  • 1 Onion in Brunoise
  • 1/2 bell pepper in brunoise
  • 1 striped carrot
  • 1 Teaspoonful of colored chili pepper
  • 1/2 cup rice
  • Parsley in chiffonade

Instructions:

    Step 1
  • Wash and drain the lentils that have been pre-soaked and cook them in a pot with 5 cups of hot water.
  • Step 2
  • Separately, heat a pan with a tablespoon of olive oil and sauté the onion until it softens slightly. Season with red pepper and salt and pepper. Add paprika and diced carrots. Cook for a few minutes over medium heat, stirring from time to time.
  • Step 3
  • Combine both preparations and add the rice, cook again over medium heat for about 20 minutes until the rice is fully cooked, adjust the flavors if necessary. Once ready, remove from the heat and serve immediately sprinkled with finely chopped parsley.
