Instructions:
Step 1
Saute the two cups of rice in 8 tablespoons of oil together with the minced garlic cloves, until the center is white. Add the boiling water, salt to taste and cook over low heat with the pot covered for 20 minutes.
Step 2
When the rice is cold, mix it in a bowl with the corn and peas. Add the mayonnaise, the ground avocado and mix well.
Step 3
Serve in a salad bowl. Perfect to accompany meats!
