Gather the ingredients, beat the eggs, peel and cut the potatoes for tortillas and leave them already salted, shred the turkey, grate the cheese, chop the onion and grate the carrot. Sauté the carrot and onion for two minutes with EVOO, salt and chopped natural parsley to taste, add the shredded turkey, add another drop of EVOO and fry everything for another 2 minutes. Fry the potatoes separately with EVOO and parsley, take them out and set them aside.
