Ingredients

  • 4 slices of coarse-cut bacon, finely chopped.
  • 1 tablespoon of unsalted butter.
  • 3 grated garlic cloves.
  • 1 small yellow onion, finely chopped
  • 1 teaspoon of kosher salt
  • 1 1/2 cups of Arborio rice.
  • 1/2 cup of white wine.
  • 4 cups of low-sodium chicken broth.
  • 1 large egg, lightly beaten.
  • 1 cup of shredded mild cheddar cheese
  • 1 cup of shredded Cheddar cheese.
  • 2 tablespoons of chopped Italian parsley.
  • 1/2 cup of sour cream.
  • 1 cup of pepper jack cheese, cut into 1/2-inch cubes (approximately 20 pieces).
  • 1/2 cup of all-purpose flour
  • 1 tablespoon of garlic powder
  • 3 large eggs, lightly beaten
  • 2 tablespoons of Buffalo hot sauce.
  • 2 cups of hot, shredded Cheetos
  • 4 cups of vegetable oil, for frying.

Instructions:

    Step 1
  • Preheat the oven to 180 degrees.
  • Step 2
  • Prepare a 9x9 baking sheet with non-stick spray for cooking.
  • Step 3
  • In a large, edged skillet over medium heat, cook the bacon pieces until crisp, about 4 minutes.

  • Transfer to a plate lined with kitchen paper.
  • Step 5
  • To the bacon fat in the pan, add butter, garlic, onion and salt, and cook for 5 minutes until the onions are soft.

  • Add rice and stir until the grains become translucent.

  • Add wine and raise the heat to medium-high.
  • Step 8
  • Stirring constantly, cook until the liquid is mostly absorbed, about 2 minutes.

  • Add the broth and simmer while continuing to stir constantly.

  • Transfer the mixture to the prepared baking pan, cover with aluminum foil and bake for 30 minutes until all the liquid is absorbed and the rice is tender.

  • Remove from the oven and allow to cool to room temperature.

  • Once the rice cools, add the reserved pieces of bacon, beaten egg, cheddar cheese, parsley and sour cream.

  • Stir to combine, cover with plastic wrap and transfer to the refrigerator for at least 3 hours or preferably overnight.

  • Place the flour and garlic powder in a shallow dish and stir to combine.

  • Add the eggs and hot sauce to another shallow bowl, and add the chopped Cheetos to a third shallow bowl.

  • Measure out 2 tablespoons of rice mixture and form a tight ball.

  • Place a cube of pepper jack cheese in the center and pinch to seal.
  • Step 18
  • Roll the risotto ball in the flour mixture, then the egg mixture and finally the hot Cheeto mixture, pressing to cover. Repeat with remaining risotto balls.

  • In a medium saucepan, heat approximately 4 inches of oil over medium-high heat.

  • Using a slotted spoon, carefully transfer a few balls to the hot oil.

  • Turn frequently to cook evenly until golden brown.

  • Transfer the cooked balls to a plate lined with paper towels to drain.
