Ingredients

  • ~1 kg Potatoes (shredded)
  • 2 Tbsp Chili Paste
  • 1 Lemon (juice)
  • 2 Tbsp Turmeric
  • 1 Garlic Clove (pressed)
  • 2 Tbsp Mayonnaise (1 for the potatoes + 1 for the bonito)
  • 150 g Bonito del Norte in extra virgin olive oil
  • 1 scallion (finely chopped)
  • 2 Tbsp Cilantro
  • 1 ripe avocado (cut into slices)
  • Sal
  • Extra virgin olive oil
  • 1 Free range egg (cooked and chopped for decoration)
  • Green olives (for garnish)
  • Parsley (for garnish)

Instructions:

    Step 1
  • Peel the potatoes and boil them in salted water —they must be cooked, but remain firm. We also boiled the eggs (I took the opportunity to boil more for other recipes).
  • Step 2
  • Shred the potatoes with a shredder, and gradually add the lemon juice, oil, turmeric, chili paste, garlic and mayonnaise. Add the salt, mix until integrated and let it cool.
  • Step 3
  • Shred the tuna lightly with a fork and mix it with olive oil, scallions (chopped), mayonnaise and coriander. We integrate.
  • Step 4
  • With a circular mold, add a first layer of mashed potatoes, a second layer of tuna filling, then another layer of mashed potatoes.
  • Step 5
  • We continue with the avocados in thin slices, and we finish with a final layer of the mashed potato.
  • Step 6
  • Decorate with hard-boiled eggs and chopped olives on top, and sprinkle with parsley.
