Japchae is a Korean dish that consists of stir-fried sweet potato noodles with vegetables and meat. It is a popular dish in South Korea and can be served as an appetizer or as a main course. The sweet potato noodles are translucent and have a chewy texture, which makes them unique and delicious.

Ingredients

  • 100 g glass noodles
  • 1 duck breast
  • 1/2 onion
  • 1 carrot
  • 1/2 zucchini
  • spinach
  • Mushrooms
  • Sesame oil
  • Sesame seeds
  • Soy sauce

Instructions:

    Step 1
  • In a bowl, soak the sweet potato noodles in cold water for about 20 minutes. This will help them soften a little bit before cooking.

  • In the meantime, we are going to cut the meat into thin strips that we can marinate.

  • In my case, I used a duck breast that I had available in the fridge but you can use any type of meat (pork, veal, chicken, etc.)
  • Step 4
  • In a bowl, place the cut meat together with a teaspoon of soy sauce, a spoonful of sugar and a little pepper.
  • Step 5
  • We mix everything and set aside.
  • Step 6
  • In a pot of boiling water we will cook the spinach, which, once ready, we will put it in cold water to stop cooking and, from which, later, with our hands, we will squeeze out the accumulated water.

  • Put them in a separate small bowl, add a little salt and sesame oil (not much) and combine everything.

  • To do this, we will cut the onion, zucchini and carrot into thin strips and, in a pan with a little sunflower oil, we will sauté them a little.

  • Let's move on to meat. In the same pan, sauté the marinated pieces of meat together with the mushrooms or mushrooms and set aside.

  • To do this, in a bowl, mix 50 ml of soy sauce together with 20 ml of sesame oil, 3 tablespoons of sugar, 1 tablespoon of sesame seeds and a little pepper.

  • In a pan with a liter of boiling water, add 2 tablespoons of soy sauce and 1 tablespoon of sunflower oil.

  • Boil the noodles (which were still soaking) over high heat.

  • Approximately 10 min. but this will depend on the instructions on the packaging.

  • When the noodles are soft, take them out and put them to drain.

  • Once drained, we take a salad bowl (deep enough to fit all the reserved ingredients) and add the noodles.

  • Before adding the vegetables and meat, we cut the noodles with scissors since they are very long.

  • Add the sauce, vegetables and meat to the noodles and mix everything evenly.

  • Give it a spicy touch by adding a little chilli powder (optional).

  • When plating, decorate with a finely chopped boiled egg on top (optional).
