Recipe of Lemon pasta
Vida Recetas Editorial
Lemon pasta is a classic Italian recipe that combines the simplicity of spaghetti with the freshness and acidity of lemon, creating a light, aromatic, and surprisingly delicious dish. This preparation, also known as pasta al limone, is perfect for those seeking a quick and elegant alternative for a weeknight dinner or a special meal. The key is to emulsify the lemon juice with butter and olive oil, creating a creamy sauce that clings perfectly to the pasta.
Why does this pasta recipe work?
- Flavor balance: The acidity of the lemon is softened by the butter, resulting in a refreshing yet comforting dish.
- Simple ingredients: With few items you probably already have at home, you get a gourmet result.
- Versatility: You can add fresh basil, black pepper, or even a touch of Parmesan cheese to customize it.
This pasta recipe is ideal for vegetarians and those who prefer meatless dishes. Additionally, it can be easily adapted to other pastas like fettuccine or linguine. If you're looking for a comforting meal that doesn't require much effort, lemon pasta will become your favorite.

Directions
-
1
Boil the salted water and put in the spaghetti. If the bag says 8 minutes of cooking, then let it boil for only 6, since we will finish cooking them in the pan later.
-
2
You can add a little bay leaf to the water.
-
3
While the spaghetti is cooking, simmer the olive oil and butter in a large pan.
-
4
Add the lemon juice and let the oil infuse. In the meantime, you can grate the lemon, the cheese and chop the basil.
-
5
After 6 minutes of cooking the spaghetti, take it out of the water and pour it into the pan, always on low heat.

IMPORTANT: HERE YOU SHOULD STORE A CUP (250CC) OF THE WATER WHERE WE COOKED THE PASTA.
-
7
Saute by adding the water little by little, without letting the pasta dry out. When the water runs out, you can add another teaspoon of butter and the lemon zest.
-
8
Season with salt and pepper to taste (the lemon pepper is very good!)
-
9
Serve and garnish with chopped basil, for more flavor and color. Put as much cheese as you want on top of it and let's eat!
