  • 3 free-range eggs.
  • 300 gr. of wholegrain spelt flour.
  • Olive oil.
  • Salt.
  • 1 red onion.
  • ½ green pepper.
  • 1 bell pepper.
  • 1 garlic.
  • 4 sprigs of cooked broccoli.
  • Fresh fennel.

Instructions:

    Step 1
  • In a glass bowl, add the flour, oil, salt and eggs in the middle and start beating with a fork from the inside out. When the time comes when we can't keep beating with a fork, we stick our hands in the dough.
  • Step 2
  • We continue kneading until all the flour is integrated. We make a ball and in the same bowl we cover it with transparent film and let it rest for a couple of hours.
  • Step 3
  • We stretch the pasta with a pasta machine and leave it as thick as we want. After that, we hang it in a cool place and wait for it to dry.
  • Step 4
  • After this time, cut it to taste and cook it in boiling water for 2 minutes.
  • Step 5
  • Now we will start with the stir-fry, which we will do by sautéing the onion, garlic and pepper, cut into medium pieces, in a pan with olive oil.

  • Once these ingredients are done, add the fennel and broccoli.

  • Add the pasta and do a couple of turns in the pan so that it takes on the flavor of all the ingredients.
