Ingredients

  • 2 kilos of lobster.
  • ½ kilo of pasta of choice.
  • 4 cups of fish stock.
  • ½ cup of dry white wine.
  • 1 leek cut lengthwise.
  • 2 sprigs of fresh thyme.
  • 300 g of Butter.
  • 300 g of mushrooms cut into slices.
  • 2 branches of celeri.
  • 1 onion cut in brunoise.
  • ¾ cup of whipping cream.
  • ¼ teaspoon of grated nutmeg.
  • 3 teaspoons of salt.
  • 10 black peppercorns.
  • 1 bay leaf
  • 3 large cloves of crushed garlic
  • 3 ½ tablespoons of flour.
  • 1 ½ teaspoon of salt.
  • ¾ teaspoon of white pepper.
  • Grated Parmesan cheese.

Instructions:

    Step 1
  • In a large pot, place enough water and put it on the fire.
  • Step 2
  • Then add the salt, leek, celeri, 10 black peppercorns, bay leaf and thyme sprigs.

  • Bring to a boil and add the tied lobster.
  • Step 4
  • Cook for 10 to 12 minutes until the lobster turns red.
  • Step 5
  • Remove the lobster from the water and let it cool, then the shell is broken and the meat is removed.

  • Remove the intestine, which is located along its upper part.
  • Step 7
  • Cut the meat into cubes of approximately 3 centimeters. Book.

  • Place in a separate bowl the liver or dark dough and the red mass that has the lobster inside the pasta.

  • Clean the mushrooms thoroughly, remove the hard and dark part of the stems and cut the rest into thin slices.

  • In a pot, heat 4 tablespoons of butter, add the onion and garlic.

  • Cook until wilted, approximately 5 minutes.

  • Add the flour, stirring constantly, cook for 1 minute. Add the pasta extracted from the lobster, stir very well and add the broth and wine.

  • Bring to a boil and add salt, pepper and nutmeg.

  • Cook for 7 minutes. Add the mushrooms and cook for 5 more minutes.

  • Add the lobster, bring to a boil and put on medium heat.

  • Cook for about 10 minutes until it thickens.
  • Step 19
  • When the sauce is boiling, bring to a low heat and add the cream, stirring for 2 minutes.

  • Cook the pasta until al dente.
  • Step 21
  • Remove the pasta from the heat, remove the water and return it to the pot.
  • Step 22
  • At minimum heat, add the sauce and stir until it is all integrated into the pasta.

  • Serve with some grated Parmesan cheese on top.
