Preheat your oven to 450°F (230°C).

In a large pot of salted, boiling water, cook the lobster tails for about 8 minutes until the shells turn red. Remove them from the water, let them cool, and then cut the shells down the center.

Remove the lobster meat, chop it into bite-sized pieces, and set aside.

In a saucepan, melt the butter over medium heat. Add the chopped shallots and sauté until they become translucent.

Pour in the white wine and let it simmer until it's reduced by half.

Stir in the heavy cream and let the mixture simmer until it thickens, about 5 minutes.
