Instructions:
Step 1
Wash the fresh basil thoroughly under cold water. Then we put it in the measuring cup of the hand blender, or whatever you have. I don't remove the stems because they give it flavor, but you can remove them if you don't like them.
Step 2
Add the lemon juice, pine nuts, garlic, liquid soy cream, grated vegan cheese, salt and pepper. Note: other times I haven't had vegan grated cheese and I haven't added cheese, and it's also very delicious, very soft.
Step 3
We grind everything with the mixer until we have a mixture like the one in the photo. We booked.
Step 4
Bring water to a boil with salt, oil and oregano. I like to do it this way so that pasta doesn't stick and has more flavor.
Step 5
Once it starts to boil, add as much pasta as we want and let it boil for as long as appropriate, depending on whether we like al dente or very cooked.
Step 6
Drain the pasta well so that it loses the water.
Step 7
Then, in the same pot where we boiled the pasta, add the pesto sauce and pasta, and put it on the fire for a little while so that the whole thing is warm.
