Ingredients

  • 4 medium sweet potatoes.
  • 2 tbsp of potato starch.
  • Cooking spray
  • 1 ripe avocado.
  • 1/2 tsp. of white wine vinegar.
  • 4 days. of heavy cream.
  • 1/8 tsp. of salt.
  • 1/8 tsp. of dried parsley.
  • 1/8 tsp. of dried dill.
  • 1/8 tsp. of onion powder
  • 1/8 tsp. of paprika.
  • Scallions, finely chopped.

Instructions:

    Step 1
  • Preheat the oven to 200º and grease a large baking sheet.
  • Step 2
  • Carefully prick each sweet potato, lengthwise, as close to the middle as possible.
  • Step 3
  • Using a knife, make a long incision from the top of the potato to the bottom while spinning in a spiral around the skewer.
  • Step 4
  • Repeat with the rest.
  • Step 5
  • Sprinkle each spiral with potato starch, and then place them on the tray.
  • Step 6
  • Spray each sweet potato with oil, then bake for 30 minutes, turning a few times to ensure even cooking.

  • Process the avocado and vinegar until smooth.

  • Add the heavy cream, salt, parsley, dill, onion powder and paprika and whisk again until creamy.
