Instructions:
Step 1
Add the oil and fry (6) the lobster
Step 2
Add the seafood to sauté it as well
Step 3
We reserve seafood and lobster
Step 4
Add the finely chopped onion
Step 5
Add the finely chopped garlic
Step 6
Add the 3 spoons of natural grated tomato. We fry until it loses its acidity.
Step 7
Add the pieces of fish. And we fry them all until it's done.
Step 8
Add a teaspoon (and a half) of sweet paprika

Add the 300g rice and fry it well (it depends on the rice used)
Step 10
Add 750ml of Fumet or fish broth (2.5 servings for each of rice)
Step 11
Raise the heat to boil the rice (10) as soon as possible and spread the rice all over the surface. (We will have the rice on high heat for about 8 minutes) (8)

(For 8 min) Add salt now
Step 13
(For the 8 minutes) After 5 minutes we add a ñora, the saffron and a little bay leaf.
Step 14
(for 8 minutes) Add the seafood for a couple of minutes on each side.
Step 15
(For 8 minutes) Test and rectify the salt point.
Step 16
Once the 8 minutes are over high heat. Leave another 5 minutes (6) on medium heat (it will depend on the rice)
Step 17
Remove the rice from the heat and let it rest for 5 minutes.
