Instructions:
Step 1
Put a splash of oil in a pan or paella pan and fry the pepper cut into strips on both sides. Reserve. In that same oil, sauté the pieces of chicken (on the thighs, if they are large, I make some cuts so that it can be done well).
Step 2
Chop the saffron in the mortar. Peel the garlic cloves, hit them with the knife to crush them a little so that they don't pop up when it's time to chop them. Add the thyme and parsley and chop everything up.
Step 3
When the meat is well sealed on both sides, add the reserved pepper and the mashed pepper. Saute for a few moments and immediately add the crushed tomato and fry. Add the chicken stock or water and boil for about 15 minutes so that the meat is done well.
Step 4
After boiling for a while, add the rice, food coloring and turmeric and cook 10 minutes on high heat and another 10 minutes on medium heat (shake the pan half way through cooking so that the rice doesn't stick). Let it rest for 5 minutes and serve.
Step 5
Note: It is normally 3 parts of water to one part of rice. The reason for adding 4 is because, when you put it to boil 15 minutes before adding the rice, it will consume water.
