Ingredients

  • 1 onion
  • 2 cloves garlic
  • 3 tablespoons tomato concentrate
  • 200 cc olive oil
  • 1200 cc chicken or vegetable or fish broth
  • 3 cups Bomba rice
  • 1 tsp saffron
  • 2 tablespoons of La Vera paprika, or colored chili pepper
  • 400 g boneless chicken breast
  • 300 g pork pulp
  • 100 g smoked pork ribs
  • 1 canned jar of seafood assortment
  • 300 g shrimp
  • 1 kilo choritos without shell
  • 100 g Spanish sausage
  • Salt to taste

Instructions:

    Step 1
  • Chop the onion, garlic, chicken, pork pulp and smoked pork into small cubes (approx. 2 by 2 cm)
  • Step 2
  • Place a paella pan over high and even heat next to the olive oil
  • Step 3
  • Add onion, garlic, chicken, pork pulp and salt to taste
  • Step 4
  • Saute for 10 minutes over high heat
  • Step 5
  • Add the smoked pork, the tomato concentrate, the 1200 broth, the La Vera paprika or colored chili pepper and the saffron
  • Step 6
  • Stir and let it boil
  • Step 7
  • When it starts to boil, add the assortment of seafood, stir, add the rice, stir, add the sliced sausage and add in a decorative way the pre-washed and brushed schorizo with shell and the shrimp
  • Step 8
  • Cook for 15 to 18 minutes, tightly covered with aluminum foil, over medium and even heat.
  • Step 9
  • After the estimated time has elapsed, check that the water has evaporated there and let it sit covered for 4 minutes with the fire turned off
