  • 1 fresh pineapple
  • 2 Kg medium prawns (boiled and peeled)
  • 1/2 Lomo Homemade marinated salmon (in slices) (See recipe)
  • 1 ripe avocado (diced)
  • 1 Lemon (juice)
  • Mint Leaves (for decoration)
  • —For the pink sauce:
  • 200 ml extra virgin olive oil
  • 1 Free range egg
  • 1/4 Orange (juice)
  • 4 Tbsp Ketchup
  • 1 Dash Brandy

Instructions:

    Step 1
  • We laminate the salmon, and reserve the larger slices, to decorate later in the shape of a rose.
  • Step 2
  • In a pot, cook the prawns in batches. Peel them and reserve in the fridge.
  • Step 3
  • Cut the avocado into cubes.
  • Step 4
  • Cut the pineapple in half and empty them carefully so as not to break the skin. The meat we take out is cut into cubes and put it in a bowl.

  • In that same bowl, add the prawns, the slices of salmon and the avocado cubes. Add the lemon so that it doesn't rust.

  • For the pink sauce. We make a classic mayonnaise: in the blender bowl, we put 100 ml of oil and the egg, and with the mixer attached to the base, we beat at maximum power until we see that it begins to emulsify. At that moment we add the rest of the oil in the form of a thread and add the pinch of salt. On top of the mayonnaise, add the ketchup, the orange juice and the splash of Brandy.

  • We serve the salad inside the pineapple peels themselves, put the salmon that we had reserved in the form of roses and accompanied by the sauce.
