  • 2 eggs
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon black pepper
  • Cooking oil, for frying

Instructions:

    Step 1
  • Start by soaking the salted codfish in cold water for at least 24 hours, changing the water several times. This will help remove excess salt.
  • Step 2
  • Boil the diced potatoes until they are tender. Drain and mash them while still hot.
  • Step 3
  • In a separate pan, sauté the chopped onion and minced garlic in a bit of oil until they become translucent. Add the soaked and drained codfish, breaking it into small pieces with a fork. Cook for a few minutes, allowing the flavors to meld.

  • Combine the codfish mixture with the mashed potatoes in a large bowl. Add the chopped parsley and black pepper, and mix well.

  • Beat the eggs and add them to the mixture, stirring until everything is thoroughly combined.
