Ingredients
4 catfish steaks or any firm white fish
2 tablespoons cooking oil
1 onion, thinly sliced
3 cloves garlic, minced
1 teaspoon ginger, minced
2 tablespoons sugar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 teaspoon black pepper
1 cup coconut water or plain water
Chopped fresh cilantro and green onions for garnish

Instructions:
Step 1
Heat oil in a skillet over medium heat. Add sugar and cook until it melts and turns golden brown.
Step 2
Add the sliced onion and sauté until fragrant.
Step 3
Stir in the minced garlic and ginger, cook for another minute.
Step 4
Carefully add the fish sauce, soy sauce, and black pepper. Stir well.
Step 5
Lay the fish steaks in the skillet and sear both sides until lightly browned.
Step 6
Pour in the coconut water (or plain water) and bring to a simmer.
Step 7
Reduce heat to low, cover, and simmer for about 20-25 minutes, or until the fish is cooked through and the sauce has thickened.
Step 8
Garnish with chopped cilantro and green onions.
Step 9
Serve hot with steamed rice and enjoy your homemade Ca Kho To!
