Recipe of Georgian Meat-filled Bread
Kubdari is a traditional Georgian stuffed bread that stands out among the world's most flavorful breads. This delicacy consists of a soft, golden dough wrapped around a juicy filling of beef and pork, onion, garlic, and a spicy aroma of coriander, fenugreek, and paprika. Originating from the mountainous Svaneti region, this bread is traditionally baked in a tone (clay oven), but it adapts perfectly to a home oven.
Its crispy exterior and tender interior, along with the savory and slightly spicy filling, make it an ideal option for a hearty lunch, a casual dinner, or even as an appetizer served in portions. It is perfect for those looking to explore Georgian cuisine or simply enjoy a different stuffed bread from the classics.
There are regional variations that use only beef or add fresh herbs like parsley or dill. The key lies in the balance of spices and in sealing the edges well so that the filling does not escape during baking. If you like stuffed breads, kubdari is an experience you cannot miss.

Prepare the dough: In a large mixing bowl, combine the flour, salt, and sugar. In a separate container, mix the water, milk, and vegetable oil. Gradually pour the wet mixture into the dry ingredients, mixing until you form a smooth dough. Knead the dough for about 10 minutes, then cover it with a clean cloth and let it rest for 30 minutes.

Prepare the filling: In a separate pan, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic. Sauté until they become translucent. Add the ground beef and pork mixture and cook until browned. Season with coriander, fenugreek, paprika, salt, pepper, and red pepper flakes if you desire some heat. Cook the filling until it's well-spiced and the meat is fully cooked. Allow it to cool.

Assemble the Kubdari: Divide the dough into 10 equal portions. Roll each portion into a flat circle (about 6-7 inches in diameter). Place a generous amount of the meat filling in the center of each circle. Fold the edges of the dough over the filling, pinching and twisting the dough to create a decorative pattern on top.
