You can place slices of bread and soak them in the soup and if you like diced cheese.

Ingredients

  • 1 kg. Onions
  • 2 litres chicken stock
  • 100 gr. gruyere cheese
  • 50 gr. butter
  • 50 ml. brandy
  • 20 gr. flour
  • 15 ml. olive oil
  • 1/2 loaf of bread.

Instructions:

    Step 1
  • Peel and julienne the onions.
  • Step 2
  • Melt the butter with the olive oil in a pot.
  • Step 3
  • Add the onions and a little salt.
  • Step 4
  • Cover the pot and cook the onions for about 30 minutes over low heat, stirring occasionally so that they don't stick.
  • Step 5
  • Add the flour and cook for a couple of minutes.
  • Step 6
  • Add the brandy and cook for a few minutes to evaporate the alcohol.
  • Step 7
  • Add the chicken stock and cook for 30 minutes over low heat.

  • Cut the half loaf of bread into twelve slices a finger wide.

  • Place the slices of bread on a tray and drizzle on both sides with a little olive oil.

  • Bake the slices of bread at 180ºC for 5 minutes.

  • Turn the slices over and bake for 5 more minutes.

  • Place the onion soup in oven-proof containers, place three slices of bread in each bowl and sprinkle with the gruyere cheese.

  • Bake for about 3-5 minutes at 220ºC.
