Ingredients

  • 300g fresh okra, sliced
  • 400g assorted meats (beef, tripe, and cow's foot)
  • 1/2 cup palm oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 tbsp ground crayfish
  • 2 tsp ground pepper
  • 2 stock cubes
  • 1 cup waterleaf or spinach, chopped
  • Salt to taste

Instructions:

    Step 1
  • In a pot, cook the assorted meats with water, stock cubes, and onions until tender. Set aside.
  • Step 2
  • Heat palm oil in another pot. Add chopped onions, tomatoes, and ground crayfish. Fry until the oil separates.
  • Step 3
  • Add the cooked meats, okra, ground pepper, and salt to the pot. Stir well.
  • Step 4
  • Pour in water and let it simmer for about 10 minutes, stirring occasionally.
  • Step 5
  • Add the chopped waterleaf or spinach. Cook for an additional 5 minutes.
  • Step 6
  • Adjust the seasoning if necessary and serve hot with your choice of fufu or rice.
