  • 2 cans of cooked chickpeas
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 ripe tomatoes, diced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 2 cups of vegetable broth
  • 1 tablespoon of olive oil

Instructions:

    Step 1
  • In a large pot, heat the olive oil over medium heat and add the onion, garlic, peppers and tomatoes. Cook for about 5 minutes, stirring occasionally, until vegetables are tender.
