Ingredients

  • 8 slices of bread
  • 2 cups (200g) sharp cheddar cheese, grated
  • 1/2 cup (120ml) beer (or milk for a non-alcoholic version)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 egg yolks
  • 2 tablespoons butter
  • Chopped fresh parsley for garnish

Instructions:

    Step 1
  • Start by toasting the bread until it's nice and crispy. You can use a toaster or the oven for this.
  • Step 2
  • In a saucepan over low heat, melt the butter. Once melted, add the beer (or milk) and stir until well combined.
  • Step 3
  • Gradually add the grated cheddar cheese, stirring continuously until it's fully melted and you have a smooth cheese sauce.

  • Stir in the Dijon mustard, Worcestershire sauce, cayenne pepper, salt, and black pepper. Mix until all the ingredients are well incorporated.

  • In a small bowl, beat the egg yolks. Gradually add a bit of the cheese sauce to the beaten yolks while whisking vigorously. This is called tempering and prevents the yolks from curdling when added to the hot sauce.

  • Pour the tempered yolks into the cheese sauce, whisking constantly. Continue to cook for a few more minutes until the sauce thickens slightly.

  • Place two slices of toasted bread on each plate.

  • Generously ladle the hot cheese sauce over the toast, making sure it covers the bread completely.
