100 g cured goat cheese - from Los Montes de Málaga
250 g flour
1/2 on yeast
3 free-range eggs -from our own chickens-
A pinch of salt
1/4 l water
for the syrup:
1 glass of water
1 stick cinnamon stick
100 g sugar or sweetener
A good splash of liquor that we like
Orange peel

Instructions:
Step 1
We start by putting a saucepan on the fire, with water, oil and salt. When it comes to a boil, we add the flour previously sifted with the yeast, we stir endlessly, we add the grated cheese, it will be like a ball, we remove it from the heat and add the eggs without stopping moving, we take it out of the pan and place it in a bowl.
Step 2
When the dough loses heat, we make the balls (if they stick to our hands, we spread them with oil), place them on parchment paper in the oven tray, it will be baked for about 20 minutes in a preheated oven at 180◦ with heat up and down.
Step 3
In the meantime, we make the syrup by heating the water with the other ingredients. When it's done, we put it in a large bowl.
Step 4
Take the balls out of the oven and while they are still hot, we put them in the syrup where they will be until they are ready to consume. When they lose heat, they will be kept inside the syrup in the refrigerator.
Step 5
They are eaten as is or accompanied by chocolate or fruit as I have presented them, however they are very good and even better from one day to the next.
