It features mashed potatoes mixed with finely chopped kale, resulting in a hearty and nutritious meal that's perfect for a cold day. The dish is often served with rookworst (smoked sausage) and gravy, making it a true Dutch favorite.

Instructions:
Step 1
Peel and quarter the potatoes, then place them in a large pot of cold, salted water. Bring the water to a boil and cook the potatoes until they are soft, about 20 minutes.
Step 2
While the potatoes are cooking, in a separate pot, add the finely chopped kale to boiling water. Cook for about 8-10 minutes until it's tender. Drain and set aside.
Step 3
In a small saucepan, heat the rookworst according to package instructions.
Step 4
Once the potatoes are cooked, drain them and let them sit for a few minutes to allow excess moisture to evaporate.
Step 5
Mash the potatoes using a potato masher or a ricer. Add the milk and butter while mashing to create a smooth and creamy consistency.
Step 6
Add the cooked kale to the mashed potatoes and mix well. Season with salt and pepper to taste.
Step 7
Serve your Boerenkool with a slice of rookworst and, if desired, a generous helping of gravy. Enjoy this Dutch classic!
