Ingredients

  • 1 egg L
  • 1/2 avocado 🥑
  • 100 g Emmental cheese or of your choice
  • 1/2 scallion
  • Sweet Corn (to taste)
  • 1 teaspoon mayonnaise
  • 4 tablespoons cornmeal (special NOT cornstarch)
  • 1/2 cup warm water
  • 1/3 tsp garlic powder
  • Sal
  • Pimienta
  • Olive oil.

Instructions:

    Step 1
  • The first step we will take will be to prepare our dough for the arepas. I chose these quantities because it was only for me, but how they came out big in the end I shared one of them with my mother because they are very filling. If you are more diners, add more ingredients, in the same package they tell you quantities.
  • Step 2
  • In a bowl, we put the flour, with a little salt, the garlic powder (it's not original but I put it yesterday) and we add the water little by little and mix until we get a dough. Once we have it we let it rest on one side, while we prepare the rest.
  • Step 3
  • In the meantime, we prepare the macaw by putting the avocado in a bowl, the corn (as much as you want) the scallion cut very very small, a little cheese there too, salt, pepper and mayonnaise, mix everything and set aside. In this step I would have added a little chopped cilantro, parsley or lime zest, but I didn't have it at home.
  • Step 4
  • Once this is done, we start to make our arepas, I grilled them but they can be fried anyway. Divide the dough in two and make two balls and crush, round the edges well, with the help of a little water if necessary. And we put them in a pan with olive oil and let them cook on medium/high heat for about 5 minutes on each side.
  • Step 5
  • Once we have our arepas cooked, set aside and in the same pan we break the egg, season and add the cheese, give it a few turns and that's it!
  • Step 6
  • With the help of a knife, taking care not to break them, we opened our arepas, and filled with the macaw and then the scrambled egg. Super easy, delicious and simple! Hope you like it! Until next time cookers.
