Ingredients

  • 24 puris (small, hollow, crispy shells)
  • 2 large potatoes, boiled and diced
  • 1 cup plain yogurt
  • 1/2 cup tamarind chutney
  • 1/2 cup mint-coriander chutney
  • 1/2 cup sev (crispy chickpea noodles)
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 1/2 cup finely chopped cucumber
  • 1/4 cup pomegranate seeds
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

    Step 1
  • In a large mixing bowl, whisk the plain yogurt until smooth. Add a little water if it's too thick. Season with salt and mix well. Keep it chilled.
  • Step 2
  • Take the puris and gently tap the top to create a hole in each one, making a small opening for the fillings.
  • Step 3
  • In each puri, add a few pieces of boiled potato and a teaspoon of chopped onions, tomatoes, and cucumber.
  • Step 4
  • Sprinkle a pinch of roasted cumin powder and red chili powder over the fillings in each puri.
  • Step 5
  • Drizzle a little tamarind chutney and mint-coriander chutney into each puri according to your taste preferences.
  • Step 6
  • Carefully place the filled puris on serving plates.
  • Step 7
  • Generously top each puri with a spoonful of the prepared yogurt.
  • Step 8
  • Sprinkle sev and pomegranate seeds over the yogurt-covered puris.
  • Step 9
  • Garnish with fresh coriander leaves.
  • Step 10
