Ingredients

  • 2 large corn tortillas
  • 1 cup refried black beans
  • 1 cup shredded Oaxaca cheese (or substitute with mozzarella)
  • 1/2 cup thinly sliced lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled queso fresco (or feta cheese)
  • 1/4 cup salsa (red or green, your preference)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

    Step 1
  • Heat a dry skillet over medium heat. Toast each tortilla on both sides until it's crispy but still pliable. Remove from the skillet and set aside.

  • In the same skillet, add a tablespoon of vegetable oil and heat it over medium heat. Place one tortilla in the skillet.
  • Step 3
  • Spread a generous layer of refried black beans evenly on the tortilla.
  • Step 4
  • Sprinkle half of the shredded cheese on top of the beans. Allow it to melt slightly.
  • Step 5
  • Carefully transfer the tortilla to a plate. Add your choice of toppings, including lettuce, tomatoes, red onion, queso fresco, and salsa.

  • Season with salt and pepper to taste.
  • Step 7
  • Repeat the process for the second tortilla.
  • Step 8
  • Serve your Tlayudas hot and folded in half like a taco. Enjoy the delicious flavors and textures!
