  • 3 grilled artichokes (the ones that were there)
  • 4 eggs
  • Young lettuce leaves
  • Thick gazpacho, to spread the bread
  • Olive oil

Instructions:

    Step 1
  • We start by discarding the hard leaves of the artichokes and dicing their edible part, set aside.
  • Step 2
  • Beat 2 eggs, season them and add half of the artichoke cubes.
  • Step 3
  • We make a tortilla in a pan approximately the diameter of the length of the croissants, set aside.
  • Step 4
  • We make a second tortilla with the remaining two eggs and the rest of the artichoke cubes.

  • We cut both tortillas in half.

  • Open the croissants lengthwise and spread the inside part with the gazpacho.
