These rolls shaped like handkerchiefs, known as msemen or Moroccan crepes, are delicious, light and crunchy, since both wheat flour and semolina are used in their preparation. Its interior reminds us of puff pastry, but with much less work than them; they are usually accompanied very well with sweet or savory pastries and a cup of tea. Its preparation is very simple, we are only going to integrate the ingredients and we are going to keep them oiled with butter and oil, in this way we will be able to stretch them until they are almost transparent. Step 1
  • Integrate the dry ingredients by gradually adding the water. Knead for about 10 minutes.
  • Step 2
  • Wrap the dough in film and let it rest for at least 2 hours in the refrigerator.
  • Step 3
  • After that time, remove the film and knead it for about 5 minutes. Cover it again with film and refrigerate it for 1 hour.
  • Step 4
  • Put oil on a tray.
  • Step 5
  • Mix the butter with the oil.
  • Step 6
  • Divide the dough into 8 balls and place them on a tray painted with our mixture of oils. Cover them with film so they don't dry out.
  • Step 7
  • Place the oil mixture on the counter and start stretching the balls with your hand. They should be very thin and almost transparent.
  • Step 8
  • Spread a thin layer of oil and semolina mixture over the dough and fold it in such a way that you get a rectangle. Spread some more of the oils and semolina on it, then fold it again until you get a square. Repeat this process with the remaining 7.
  • Step 9
  • In a frying pan, heat a few drops of sunflower oil.
  • Step 10
  • Paint the square of dough with your hands, with the mixture of oils, stretch it a little and give it a square shape. Place it on the pan and let it brown for 2 minutes on each side on medium heat.
  • Step 11
  • Place them on kitchen paper to remove excess oils. Accompany them with honey, cream cheese, avocado, jam, etc.
