Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water
  • 1 can (24 oz) cherries in syrup, drained
  • 2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup chocolate shavings
  • Maraschino cherries for garnish

Instructions:

    Step 1
  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Step 2
  • In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Step 3
  • Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix until well combined.

  • Gradually add hot water and mix until the batter is smooth. The batter will be thin; this is normal.

  • Divide the batter equally between the prepared cake pans.

  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  • Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.

  • While the cakes cool, prepare the whipped cream. In a chilled mixing bowl, whip the heavy cream until it begins to thicken. Add powdered sugar and vanilla extract, then continue to whip until stiff peaks form.

  • Once the cakes are completely cool, slice each cake horizontally to create a total of four layers.

  • Place one cake layer on a serving plate. Spread a layer of whipped cream over it and add a portion of the drained cherries.

  • Repeat this process with the remaining layers.

  • Frost the top and sides of the cake with whipped cream.
